I am supposed to be studying, but I’m not. I just couldn’t wait to share this amazing recipe with you all!

I hated zucchini for 32 years of my life until I started the low fodmap diet and realised it was one of the limited low fodmap vegetables. Now I love it, although I still won’t eat it steamed. I grate it into absolutely everything, which is why when I saw this recipe today I had to try it straight away and it was easy to convert it to be fodmap friendly. I’ll show you how…

Instead of writing out the recipe again, I will give you the instructions on how to make them low fodmap and then you can go for it. Low Fodmap Conversion:

1. Instead of all purpose flour use a fodmap friendly flour: gluten free flour, spelt flour or buckwheat flour (which is what I used)

2. Replace garlic cloves with 2 teaspoons of garlic infused olive oil

We liked the fritters so much that are planning to make them again for breakfast – think large zucchini fritters topped with a poached egg and perhaps some bacon on the side…  I took a photo which you can now see at the top of this post….

  1. funny thing that you mentioned not liking zucchini until this diet. I grew up in South Carolina,….in the rural south! We only ate Zucchini and Yellow Squash fried. it was more like chips. lol. Then I got to the point where I really didn’t like fried food, and that limited my knowledge of vegetables. ha. But as I grew up, I came to know veggies in a whole new light.
    long story to get to the point….now I found I love zucchini raw! amazing huh? I really like it grilled to, but I like it cut thicker. I’m not crazy about it steamed either, but I’ll eat it….if I have to. 😛

    • It is funny isn’t it! I have always been the same with cucumbers too, I absolutely detested them until about 4 months ago and now I eat cucumber most days, raw or in a green smoothie for breakfast!
      I have been eating zucchini everyday lately as well, they are in season here and are just wonderful at the moment. I have’t tried them raw, but I have heard people say they are great grated into a salad. Do you dip it in something or just eat it straight?


      • Hi Sacha….I just eat it straight. I found it on a salad bar one time and thought….Ok, I’ll try it, and boy was I was surprised to like it! Now I’ll just munch on it. haha
        I’ve always liked cucumbers, but not the ones with big seeds. Which we had a lot of growing up. I think my father thought he had to grow the biggest things possible in his garden. haha Of course, that meant things with big seeds.
        I love to eat in season.
        Spring has just started here, so I look forward to all the fresh produce. I miss being able to eat some of the things I used to, but I like experimenting.
