This recipe will blow your mind! I found this one on a lovely blog, Delicious Obsessions, and the only adjustment that you need to make for this to be a low fodmap recipe is to replace the honey with rice malt syrup. Visit the original recipe, here.
When I made the this I found that I didn’t have quite enough macadamias so I substituted walnuts to make the required amount and I was so glad I did as the caramel walnuts are also amazing! Next time I make this I will use a 75/25 ratio of macadamias and walnuts as I really liked the combination.
I have used the Caramel Macadamia Nuts in two of my Christmas recipes:

Raspberry and Caramel Macadamia Ice-Cream Pudding
These nuts are also equally good on their own, the trouble is that once I start it is a bit hard to stop!
I would suggest that you store these in the fridge or freezer as the caramel is soft.
